“Although limited with the suppliers that grow certified organic, Shearwater manages to provide excellent quantity coffees that are organic at a price that is very competitive. However, the most notable achievement is the perfecting of the roast of each crop by trial and error. For example, the dark roast of Papua New Guinea is incredibly smooth while providing rich aromas typical of the region. There are many micro-roasters that simply focus on supplying quality coffees that brew a satisfying cup, and this is definitely one of them. I am waiting for them to find quality organic coffees grown in the United States, i.e., Hawaii.”
