Texas Monthly award winning quality barbecue. This place is amazing, moist brisket with perfect bark, pulled pork was awesome and had some bite to it, and jalapeño sausage was some of the best I’ve ever had. What makes it even better is it’s a super simple family run place. Go support these guys and have some of the best food in Parker county!
I was out here out of town for a work trip and we were looking for a barbecue spot. We got here right before closing and wow!!!
Hands down. The BEST BARBECUE I HAVE EVER HAD! not only was it delicious but there customer service is amazing. They even gave us a full rack of ribs on the house. Incredible. I will travel to come back to this place!
Texas BBQ is something special, it’s not just a source of pride, but an embodiment of spirit, a passion of the pit master, and sense of community! And 589 Hickory BBQ exemplifies this in spades. Let me explain…
I’m the father of the bride, and on that eventful evening in early October, a worse case scenario arose… the caterer was a no show. In the midst of panic and crushing emotional drama from the wedding party, we called 589 Hickory BBQ to see if they had some BBQ… we were expecting to have to piece it together from several restaurants in order to feed 150 people. But, in a true TX spirit of helping those in need, they shut down the restaurant, put everything they had (literally… including bags of chips) into their trucks and were onsite in 30 minutes.
And while you may think this is a biased review, you’re absolutely right… because the bbq was amazing! It saved the day, literally! And you know people will say something about TX BBQ that isn’t up to snuff; instead, people were complimenting how delicious it was, I had the ribs and pulled pork – both moist, perfectly smoked and delicious! That’s the love of the pit master coming through!!
The owners and staff at 589 were amazing, not only did they get onsite, with a full restaurants worth of food, but they stayed and plated food and help with serving. It’s no wonder the spirit we all felt from them was so pure, they are a local family owned business, perfecting their craft, and exemplifying their community with those they’ve never met before… that’s what TX BBQ, and specifically 589 Hickory BBQ does, it’s a source of pride for those that work there, but should also be that for Weatherford and all surrounding communities.
My daughter, her husband, and all of us are eternally grateful for the kindness, love and spirit 589 Hickory BBQ embodies and represents – I hope my daughters family can take their kids their in the future (many years in the future) to share the story of their wedding!
First visit to 589 for us this evening. We had the jalapeno cheese sausage, brisket (lean and moist) and ribs with sides of mac and cheese and collard greens and the complimentary pinto beans and salad bar for dinner and peach cobbler with ice cream for dessert. I will say we were VERY IMPRESSED with the meats and pinto beans, the mac and cheese was pretty average and the greens had a good texture but were a little sweet which is not what I am used to. Cobbler was on point. Service was excellent from beginning to end! They were very personable! We will definitely be back!!
BBQ here in Texas can be subjective. But in my opinion, the 589 offers some of the best I’ve had (and I have made a dent in The Texas Monthly’s top 100 list). The surroundings are modest but the offerings are opulent. In particular, the ribs were outstanding. They were a perfect mix of smoke and flavor, featuring a bark mixing a touch of tang and a bit of a bite. No sauce required! (But that was great too). The sides were generous and tasty. An added bonus is a complimentary bread, bean and salad bar. Rounding out my meal was some blackberry cobbler to-go. With a scoop of vanilla ice cream it was all you could ask for. BBQ is fine at the 589!
